Juanes is a Pottage made with rice, pieces of poultry meats, eggs, olives, aromatic herb and spices,all wrapped up in "bijao" (leaves of a plant from the jungle) and boiled in clay pots.

Inchicapi regional soup is of similar characteristic to the juanes the only difference is that they are made with chicken meat and they are roasted.

Sarapatera soup is a kind of stew prepared with "charapa" (turtle variety) and spiced with onions, garlic, green meat banana and spices. The final cooking of the stew is made in the shell of the turtle and it is served in the same shell. It is very delicius for your paladar.

Existen una gran variedad de platos preparados a base del mas sabroso pescado de los rios amazonicos el mas conocido es el paiche, que se preparara: a la plancha, frito o chicharrones acompañados de sus guaniciones como platano verde frito, platano maduro ,yuca o papas doradas. Existen otras variedades como el zungaro y el dorado parecido a un bagre gigante muy apreciada por su carne blanca, acompañados de las salsas exoticas al estilo El Mesón.
There is an big variety of prepared fish from the Amazon River, but most known for its delicious taste is "El Paiche". "El Paiche" is one of the biggest types of fish from the Amazon River with a length of more than 2 meters and weights about a 130 KG. It is served as grilled, fried or as nuggets, typicaly served with fried green banana, overaged banana, manioc or grilled patatoes. There are also other varieties of fish from the region like the "El Zungaro" or the "El Dorado" river fish. Both are widely appreciated due to its white meat and is accompanied by exotic sauses from our own El Mesón recipe.
